Little. Yellow. Different. This pepper, the Nuprin of peppers, is among the most flavorful peppers in existence. These pea-sized yellow balls of excellence hail from the Amazon region of Perú*, and are commonly imported to Lima at exhorbitant prices (some people report around $10,000 USD per pound; we are skeptical.) Every year, we grow as much of this pepper, a capsicum chinense variety, as we can because, despite its finicky nature, it really is the most delicious pepper we have ever tried. It has a ton of heat, a healthy dose of citrus flavor, and an unforgettable burn that leaves you wanting more. Erich, pepper enthusiast and chef at Three Sheets in New Haven, CT, was able to immediately isolate the flavor of this pepper in our sauces. Trust us; it really is that good.
*Fun fact about the Amazon jungle of Perú: I had a linguistics professor in college who had just returned from a trip to study indigenous languages here, and he informed us in the first class that he had contracted malaria. He shared this because, in his words, "malaria is a very punctual disease," so we would understand why he might pick up and leave around 3:45pm. Our class was supposed to end at 4pm.
